  • ½ cup grated Gruyere cheese
  • ½ cup grated provolone cheese
  • ¼ cup finely grated Parmigiano-Reggiano cheese, plus more for topping
  • 3 cloves garlic, finely minced
  • ⅓ cup thinly sliced green onion, white and light green parts only
